You can see Cape spear opposite the sun in this picture. There are more on my Flickr. There were a lot of people that came. It was nice since we only had to get there for around 7. My fingers got so cold though, Cassandra was smart and stayed in the car most of the time. I had fun taking pictures though.

I also spent this weekend processing the pictures I took in Winnipeg, sorry I kind of forgot about them, they are up on Flickr as well.

What to do with gelatin powder?

So Cassandra got me to pick up some Knox gelatin from the store to make stabilized whipped cream for the pumpkin pie this weekend. It worked great and she even let me do it, or actually made me do it because she was tired of baking all day. In any case we now have a tons of gelatin packets with no idea what to do with them. Cassandra isn't a fan of Jell-o, a crime against humanity. I'll just have to make my own fruit block desserts. Any other ideas out there?
By the way the pie was delicious and was made with the pumpkin we pureed and froze last November.

Thanksgiving Potluck

Cassandra has made a delicious looking pumpkin pie and cookies with brown butter icing for potluck tonight.
I whipped together some cranberry sauce with orange juice and other spices. And we have word that the turkey is sizzling away at the moment, almost ready for our arrival.
Fall is the best.

Auntie Marcie's Tea Biscuit Cinnamon Rolls

Yesterday Cassandra made potato cheese perogies, and i didn't here a single complaint. I think they worked out quite well and they tasted awesome. I made banana bread muffins with chocolate chips which tasted more awesome. We took the spoils to our friends place for a potluck and a game of Nightmare. This is a hilarious game from the early 90's, you can look at it here. You are supposed to set an 'atmos-fear' with low lights and a loud tv and then randomly get called a maggot and get banished by a guy who filmed himself with a cloak and a party light in his basement.

Here are some shots from Signal Hill and Regatta Day when our friend came for a visit. Click the image to go to my flickr account.

Ferryland Light House Picnic

It was an awesome time. Cassandra and some friends and I went to Ferryland Lighthouse for a Picnic. There they renovated the lighthouse to be a foodie destination where yo can buy a picnic and enjoy the view. Boy did we ever get a view. The two weeks of dreary clouds started to part, We saw an Iceberg in the bay on one side and on the other, pods of whales. Humpbacks breaching, Minkies swimming and spurts of water being blown into the air.
The food was delicious and we picked a quiet spot sheltered from the wind. I had a great time. Cassandra got so excited she was jump clapping. That checks a lot off our Newfoundland to do list.

It was great going for a walk in the sun, Tons of people have gone to see the ice and couple climbers even swam to the Iceberg and climbed it. Click here to go to the CBC article.

Guinness and Bacon and Cheese Meatloaf

I bet you're jealous! Cassandra and I made this over the weekend. It's awesome and is going to last us a few days. It's groundbeef with caramelized Guinness onions wrapped in bacon and covered in a Guinness, honey, brown sugar glaze.
It's delicious, and was hard to wait for, we got so hungry the house smelled like sweet bacon. It took so long to bake because we put all 2lbs of beef together rather than make 2 loaves, sorry Cassandra.

I was lying on rocks on the beach trying Depth of Field stuff, people probably thought I was a little odd. A lot of people would come around with their DSLRs though, it's a popular spot. I also decided to take a few icicle pictures which I think turned out well.

I also made Cassandra a Banana cardamom cake for this occasion with browned butter frosting which tasted so good no one said anything for a few minutes. I also got her a yellow tea pot to suit the occasion.
Cassandra found the recipe on foodgawker, Banana cardamom walnut cake with browned butter icing. http://bobvivant.com/2011/11/18/unfriendly-skies-and-a-banana-cardamom-cake/ .

I felt like I should do something productive though and it seemed like a good idea to make some good food like roasted garlic hummus and Keema. I thought of the Keema my dad used to make and I just had to have it. Both were so delicious and satisfying. Unfortunately I didn't think of taking pictures until after I started to put the food away. I'm going to watch the NHL skills competition this evening with a happy belly.

Winter at Middle Cove Beach

Winter at Middle Cove Beach
Originally uploaded by The Tedster

Cass and I went to Middle Cove beach by our house after a snowfall today. It was a lot nicer than I expected, sheltered from the wind there wasn't much snow on the ground. We could so have a winter bonfire. We walked around snapped a couple pictures and then went to Michael's where Cass stared at paints thinking about who knows what. Maybe how awesome paint is. Then we went home empty handed to eat pickles and watch the pulled pork cook. It was a delicious day.
