What to do with gelatin powder?

So Cassandra got me to pick up some Knox gelatin from the store to make stabilized whipped cream for the pumpkin pie this weekend. It worked great and she even let me do it, or actually made me do it because she was tired of baking all day. In any case we now have a tons of gelatin packets with no idea what to do with them. Cassandra isn't a fan of Jell-o, a crime against humanity. I'll just have to make my own fruit block desserts. Any other ideas out there?
By the way the pie was delicious and was made with the pumpkin we pureed and froze last November.

  1. You could try making tea-infused gelatin cubes. Brew some tea and use that as the liquid for your gelatin. The recipe I'm looking at calls for 3 oz of powder to 1 oz of liquid, but maybe that's a little off? I guess it would make for some sturdy cubes.     1. The recipe says not to use chamomile; I'm not sure why.
